One of our favorite dinner ideas is actually breakfast for dinner! Not only is it one of my family’s favorite meals, it’s the easiest concept to make, especially when I run out of dinner ideas.
I usually start out with frying up the bacon…then cooking the pancakes…then scrambling some eggs.
But recently I was sent a Frigidaire Double Burner Griddle to try out and must say it’s made cooking time a whole lot easier. It’s super easy to clean too.
I can cook the bacon and the pancakes at the same time and even fry up some eggs too. Although, scrambled eggs didn’t do quite as well.
Here is the recipe for the Chocolate Chip Pancakes I made last night!
Chocolate Chip Pancakes
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups milk
- 2 eggs
- 3 tablespoons melted butter
- 1 cup chocolate chips
- 1 teaspoon vanilla
- In a large mixing bowl, stir together the flour, sugar, baking poweder, baking soda, and salt. Using a whisk or fork, mix in the milk, eggs, and vanilla until well combined and smooth. Stir in melted butter and chocolate chips.
- Heat non-stick skillet or griddle over medium heat. Using a ¼ cup measure, pour pancake batter onto hot griddle. When pancake is golden brown, flip to cook other side.
