Peanut Butter & Jelly Cookies

Since we live in Utah, I just had to incorporate two delicious local ingredients. The honey I used for these cookies is from northern Utah, in Logan. It’s not just regular honey either, it’s mixed with raspberries grown here as well. They don’t call this the Beehive state for nothing. There are so many delicious varieties of honey to get here too. Then of course the “jelly” is made with the famous raspberries from Bear Lake, right here in Utah.  Which I hope we can go pick ourselves this year.

These cookies are beyond delicious. My girls have always loved peanut butter sandwiches, weather it’s PB and honey or PB and jelly. So why not incorporate a similar combination into a cookie? My family loves peanut butter, honey, and jelly – the perfect combination. My girls also love to help me bake, and these cookies are so much fun to create as well. The perfect kid-friendly recipe.

Ingredients
  • 1 package yellow cake mix
  • ¼ cup packed brown sugar
  • 2 tbsp. soft butter
  • 1 tbsp. raspberry honey
  • 2 Eggland’s Best eggs
  • 1 cup peanut butter
  • Raspberry Jam
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, mix together cake mix, brown sugar, butter, honey, eggs, and peanut butter.
  3. Scoop the dough into balls, and place slightly apart on the baking sheet.
  4. Press a thumbprint into the center of each ball, about ½-inch deep.
  5. Fill each indentation with about ¾ teaspoon jam.
  6. Bake cookies until the edges are golden, about 15 minutes. Cool and serve.
