We love breakfast around here. Probably more than any other meal. I know it’s holiday season and everyone is freaking out about what to make for Thanksgiving or Christmas dinner, but here I’m more concerned about breakfast!

Especially Christmas morning.

You know, that morning where the kids are up at the crack of dawn so excited to break into their gifts. Where the day may be filled with lots of entertaining, traveling, and just crazy fun. The last thing I want to think about is what to make, how long it will take me to make it, and even worse, how long it will take to clean up the breakfast mess.

No way! I’ve got better things to be doing. Like cuddling my girls and watching the Christmas parade on TV.

The best way to deal with less fuss Christmas morning, or for any morning really? Plan ahead, and be prepared.

Cheesy Bacon & Egg Biscuit Bake

Know what you’re going to make, and make sure you have everything you need to make it. Even the little stuff, like having PAM Cooking Spray, to coat your dishes and pans before cooking. While it takes mere seconds to use, it can save you time after cooking. No having to scrub for what feels like hours.


I’ve cooked a handful of times forgetting to coat my pan. It’s not pretty, and then you end up having wasted the food that got stuck on.

This is one of my new favorite recipes right now. Mainly because it’s pretty darn easy to make, since most of cooking is done in one pan, in the oven.


Cheesy Bacon & Egg Biscuit Bake



  • 1 can of (8) biscuits
  • 1 package of bacon
  • 2 cups shredded cheese (Cheddar, Colby, etc.)
  • 8 eggs
  • 3/4 cup milk
  • PAM cooking spray
  • salt and pepper to taste


1. Preheat oven to 425 degrees. Spray your baking dish with PAM.


2. Cook the bacon on the stove top and set aside.

3. Layer the baking dish with the biscuits. Spread half the cheese on top.


4. Layer the bacon on top of the biscuits and cheese.

5. Whisk the eggs, milk, salt and pepper in a separate bowl. Pour into the baking dish.


6. Bake 35 minutes. Add the rest of the cheese on top, during the last five minutes of cooking.
